This unique, artisanal micro-distillery has earned a reputation as a ‘must see’ for tourists and locals alike! Located in Montreal’s Sud-Ouest district, Cirka distillery is listed in En Route magazine as one of the top 10 things to do in Montreal, and it also pops up in Google searches of things to do around the city.
Cirka is best known for its Gin Sauvage that is created from 100 per cent Quebec-grown corn and more than 30 botanicals found in Québec’s boréal forest. Unlike most micro-distilleries that craft gin from neutral spirits sourced elsewhere, Cirka is fully grain-to-bottle. Owner, Paul Cirka spent countless hours testing his recipes, working with foragers, and consulting local botanists to ensure the end result was perfection.
Producing the award-winning Gin Sauvage starts with a homemade spirit base that is distilled in a customized pot using a botanical basket. The technique allows warm vapors to extract the botanical oils, which are then infused into the gin. The result is a unique and complex gin that offers pine, floral, and fruity notes.
Cirka’s Gin Sauvage can be enjoyed on it’s own or in a cocktail. Below are a few classics that are sure to be a gin drinker’s go-to.
1 1/2 oz Cirka Gin Sauvage
Fever Tree Tonic
Combine gin with ice to top of glass. Add tonic to fill top of glass and garnish with a lemon slice.
1 oz Cirka Gin Sauvage
1 oz Vermouth
1 oz Campari
Combine all ingredients into a mixing glass. Mix with a bar spoon for 10 seconds. Filter in a glass filled with ice and garnish with orange zest.
2 oz Cirka Gin Sauvage
1 oz Dry Vermouth
1 dash orange bitters (optional, but highly recommended)
Combine ingredients in a mixing glass and fill with ice. Stir well to chill and strain into a chilled cocktail glass. Twist a piece of lemon peel over the drink and use as garnish, or, if you must, toss in an olive.
