Prosecco is one of my all-time favourite beverages to sip on in the summer, or anytime of the year for that matter. I love the fizzy bubbles and crisp, clean taste that the sparkling Italian wine is known for.
Produced in the northeastern region of Friuli-Venezia Giulia, Prosecco is often compared to Champagne but it made with different grapes and is much easier on the pocketbook.
My go-to is La Marca Prosecco, which is middle of the road price-wise and never disappoints. One of the great things about Prosecco is that it’s easy to transform to a tasty, posh-looking cocktail. Here are a few quick and easy recipes that are perfect while relaxing on your deck or serving at a summer party.
Raspberry Limoncello Prosecco
3 cups prosecco, chilled
1 cup limoncello liqueur, chilled
1 cup frozen raspberries
6 sprigs fresh mint
In a large pitcher, whisk together prosecco and limoncello. Pour into a tulip glass and garnish with three raspberries and mint.
Watermelon Mint Prosecco
watermelon
prosecco
mint
Place a few cups of watermelon into a food process and blend. Pour through a fine sieve to reserve the juice. Fill bottom of glass with fresh watermelon juice – how much depends on how intense you want the watermelon flavour to come through. Top with prosecco and garnish with mint.
Gin & Elderflower Prosecco
2 parts gin
1 part elderflower liqueur
prosecco
lime wedges
sugar (for the rim of the glass)
Fill a shaker with ice, gin and elderflower liqueur and shake.Place the sugar on a small plate. Run a lime wedge around the rim of a martini glass and press the rim of the glass in the sugar to coat.Strain the contents of the shaker into the glass and top with prosecco. Squeeze a lime wedge in the drink and garnish with an additional wedge.
Lemon Berry Prosecco Sangria
1 lemon (thinly sliced)
2 tbsp sugar
¼ cup strawberries (de-stemmed & sliced)
1 bottle prosecco
Place lemons in the bottom of a pitcher or punch bowl. Sprinkle with the sugar and muddle (squishing it with a muddler or a spoon). Add the sliced strawberries and muddle the strawberries into the lemons. Add the prosecco to the pitcher. Fill with ice and serve.
Prosperity Prosecco Cocktail
For a single cocktail:
25 ml gin
1 tbsp crème de cassis
2 tsp elderflower liqueur
25 ml fresh grapefruit juice
chilled prosecco
Directions: Put all of the ingredients except the prosecco into a cocktail shaker with a handful of ice, and shake hard. Strain into a flute shaped glass and top with chilled prosecco.
