Candy corn is a classic Halloween sweet, made even more fun when it’s gelatinized. This can be adult-friendly treat by making it with vodka. All you need is a couple boxes of flavoured gelatine, and a packet of plain to set some milk (or coconut milk).
Bring a kettle of water to a boil. Dissolve the lemon gelatin in 3/4 cup boiling water and if you like, stir in 1/4 cup vodka. Pour into an 8x4-inch loaf pan that has been sprayed with nonstick spray. Refrigerate for an hour, or until set.
Repeat with the orange gelatin, pouring it over the set lemon layer.
Put the half & half or coconut milk into a small saucepan and pour the package of plain gelatin over it; let sit for a few minutes, to soften. Bring to a simmer and stir in the sugar and vanilla. Stir until the gelatin is completely dissolved, then cool slightly and pour over the orange layer. Refrigerate for several hours, until well set.
Run a thin knife around the edge of the pan to loosen, and invert it onto a plate or cutting board. Cut into squares, diamonds or triangles to serve. Serves 8-12.
