Lager, cheddar and caramelized onions...a combination to impress everyone at the dinner table!
Pairs well with grilled lemon garlic chicken breast.
To make lager gravy
Sauté onion by slowly cooking it in butter, stirring occasionally for 3-4 minutes. Add garlic into butter and sauté further until softened. Add flour to the pot and mix thoroughly, then cook the flour mixture for a minute or two while stirring occasionally.
Add the beer and mix into the onion mixture. Drizzle in milk incrementally, mixing thoroughly between additions. Bring to a simmer, then turn the heat down to maintain the simmer and cook for 5-6 minutes, stirring often to ensure it’s not catching on the bottom.
Add grated cheese and mix to combine. Taste and add salt and white pepper to adjust seasoning as needed.
To make mashed potatoes
Peel and julienne onions and caramelize them by slowly cooking over medium heat in the oil. (This is even better if done the day before as caramelizing onions takes some time. They are a great thing to have around if you do a batch on a day you are food prepping you can add them to a myriad of dishes throughout the week.)
Peel and chop the potatoes. Place potatoes in a pot of cold, salted water and bring to a boil over high heat. Reduce heat and simmer for 10-15 minutes or until fork tender.
Heat cream and melt butter in a separate pot (or microwave). Strain potatoes and place back into warm pot to mash to keep them hot.
Mash the potatoes, add the hot cream and butter and mix through. Add the caramelized onions and mix through as well. Season with salt and white pepper and taste, adjust seasoning as needed.
