The Chablis wine region in France is well known for its beautiful Chardonnays. By law, wines made in Chablis must be 100% Chardonnay grapes, and while Chardonnay has a reputation for being full bodied with enough oak and buttery hints to potentially mistake it for popcorn, you can't paint all wines from the Chablis area with one brush. When drinking Chablis you can throw the notion of popcorn and buttery pineapples out the window; it rarely sees any oak and instead is a wine with crisp citrus and flinty minerality. Jadots entry level Chablis will remind you of a glacier stream: crisp and raw with the faint scent of wet stones. A very pale yellow can almost be mistaken for clear in the glass, and you'll also notice a delicate bouquet of lemon peel and under-ripe stone fruits. Chill Chablis well and pair with anything covered in a cream sauce, or even a beef stroganoff. Pour a glass for yourself and pour a glass into your dinner!
